Wine-growing and viticulture to preserve and restore the cultural identity of wine-making regions in Moravia
The research project is based on exploration of traditional wine - making technology and terrior yeast - cultures. The growing interest of the wine - makers and of the consumers in the origin, originality, and authenticity of the products is the fundament for this project. The objective of this project is to report and validate traditional viticulture technologies linked to the regional and local habits of particular vine - maker communities of the Morava wine - making region. The research comprises of several topics from historical (maping of old wine - tracks, occurence of typical wine - variety, tradition, and wine - making law) to technological (spontaneous fermentation with autochthonous yeast - cultures and typical microbial communitites) area. The project beneficiaries are Mendel University in Brno, Masaryk University, and Czech Research Institute of Brewing and Malting. The EPS biotechnology company provides qualified biotechnology services as a subcontractor.
